CAS 4413 - The Art of Craft Brewing: The Athens Case Study In this course, students learn how the craft brewery movement in Athens, Ohio, demonstrates a return to fermentation – one of humanity’s earliest technologies – and how liquid bread can become a catalyst for community economic development. Students learn the basics of starting a brewery and a tap-room by reference to the rich craft brewing scene in Athens, and how the elemental aspects of place, local traditions, fruit and indigenous yeasts, are expressed in Athens beer-making.
