RHT 4400 - Beverage Management This course focuses on the study of beverage service in the hospitality industry including spirits, wines, beers and non-alcoholic beverages. Topics include: purchasing, resource control, legislation, physical plant requirements, and the selection of beverages.
Requisites: RHT 2420 Credit Hours: 3 Repeat/Retake Information: May be retaken two times excluding withdrawals, but only last course taken counts. Lecture/Lab Hours: 3.0 lecture Grades: Eligible Grades: A-F,WP,WF,WN,FN,AU,I Learning Outcomes: - Students will be able to analyze equipment, materials, and products appropriate for a beverage operation.
- Students will be able to practice beverage cost control techniques for maximum efficiency in menu selection.
- Students will be able to develop standardized recipes for diverse menus.
- Students will be able to distinguish between the various types of beverage operations.
- Students will be able to recognize the proper procedures in the making of wine, beer, and spirits.
